But where do I have to go in Sharpcraft to change the "walkability" of a tileset?
That feature never was or will be supported by sharpcraft.

I think it is possible with modern WorldEdit if you enable local files and override the data file (SLK?) responsible for declaring the baked pathing of tile types. Hopefully future versions of WorldEdit will have this functionality built in as it starts to approach feature parity with SharpCraft and beyond.
